HEALTHY LEMON CAKE

Although a “healthy cake” sounds like an oximoron, it is possible. This cake is both flour and refined sugar free, but it tastes absolutely marvelous. A few days ago, I was totally craving lemon cake, so I went online to look for healthier recipes, preferably without regular flours and sugar. I found a paleo recipe for a lemon cake and after reading all the raving comments underneath the recipe, the decision was made. Most ingredients you will be able to find in your regular food supply stores or DM stores, but you might have trouble finding coconut flour. A good idea is to look for it on iherb.com.

To make the recipe easier for the EU ladies, I converted the US cups to grams, but you are free to work with cups if you prefer them. Make sure to use a small cup that fits 250 ml of water.

Dry ingredients:

Wet ingredients:

  •  220 g (2/3 of a cup) maple syrup (Alnatura)
  • 140 g (2/3 of a cup) coconut oil (Alnatura)
  • 4 eggs
  • 160 g (1/2 of cup + 3 tbsp) full fat coconut milk (Alnatura)
  • zest & juice from 1 lemon

To begin, combine the dry ingredients in a large bowl and use a whisk to bind them and break any lumps that might come from the coconut flour. Set aside.

You will need to blend the wet ingredients, so if you are using a stand blender, put all the ingredients into its own container. I used a hand blender so I chose a large enough container that would fit all the ingredients and my blender. You can blend after each ingredient or just wait until the end to blend everything together.

Zesting a lemon and squeezing the juice from it is going to make your hands smell lovely! I adore this scent! Adding the lemon is the final step before blending.

Once you’ve got all your wet ingredients blended, add them to the dry ingredients that have been set aside. The first time I made the cake, I was scared that the batter would turn out far too runny, but the ground almonds and coconut flour absorbed much of the moisture and the batter consistency was perfect!

Bake the cake at 180 °C for about 35 minutes until it passes the toothpick test. Enjoy your wonderfully moist and delicious lemon cake! :)

  • ajme, totalno ti zavidim što imaš domaćeg limuna, torta će ti biti prefina. jučer je frendica radila i čak je 2 limuna stavila umjesto jednog jer joj je smjesa bila nekako suhnjikava, dok je moja bila dosta vodena, ali kaže da je torta preukusna. :) sutra je taj dan!
